Grilled Salmon, Crab Legs with Farmers Market Veggies!

We've ended the weekend on a high note...Salmon and crab legs on the grill with fresh spinach and potatoes from the Farmers Market.  It was a busy, crazy time last week and I love it when we get to settle in on a Sunday night and "JUST BE"....
Tomorrow will be here shortly, but tonight, we're just hanging out, laughing and planning for what's ahead.
Grilled Salmon with Crab Legs
There's nothing hard about this dinner!  Fresh, wild caught salmon with a little olive oil - generous salt and pepper on a really hot grill. Cook until it's "like you like it."  Slice lemons and grill.  When fish is done,  remove and put in a warm oven. Place a large piece of tin foil on grill and load on crab legs.  Cook about 8 to 10 minutes.  While the legs are on the grill....melt butter, s/p, lemon juice in bowls for dipping in that awesome crab goodness.
Fresh spinach and fingerling potatoes from Farmers Market
Roast potatoes on grill in a large tin foil packet with olive oil, salt and pepper for 25 minutes, turning once.  For spinach, heat sauté pan and add 2 tablespoons of butter.  Add 1 clove of minced garlic, salt and pepper and cook on medium low for 3-5 minutes.  Put spinach in pot and gently mix with butter and garlic.  Once the spinach is cooked down - about 8 minutes, well, you are done!  Yipee.....
Taking a breath and counting my blessings......
