Several years ago a good friend gave me this salsa recipe to try. He raved about how delicious it was and being that he's such a good cook, I trusted him. Then I saw the name - 5 Minute Salsa, are you kidding?
Well…just pass the chips because this salsa really only takes about 5 minutes to make and it's awesome! There's a couple of different ways to make it, substituting ingredients you might already have in your pantry. I like to use either fresh jalapeño or canned chipotle chiles in adobo which give a rich, spicy taste. You can also use lemon or lime juice depending what's on hand or on sale. Just dump the ingredients into your food processor or blender and you've got fresh salsa in 5 minutes.
Bring on Cinco de Mayo!
5 Minute Salsa
1/2 small jalapeño chili or 1/2 chipotle chili in adobo sauce - minced
1/4 small red onion - roughly chopped
1 small garlic clove - minced
2 tablespoon fresh cilantro or parsley leaves
1/4 teaspoon salt
Pinch of ground pepper
2 teaspoons fresh lime or lemon juice
2 small ripe tomatoes - cored and roughly chopped (1 14 oz can of diced, drained tomatoes can be used)
- Pulse all ingredients EXCEPT tomatoes in a food processor until minced. Scrap down side of bowl.
- Add tomatoes and pulse until roughly chopped - about 2 to 3 pulses.
- Makes about 1 cup
