Grilled Peach Sauce

Yesterday, I found a few peaches in the fridge (somehow or another I'd forgotten about these babies!) that were just the right stage of ripeness and decided to make a little something for dessert.  With cake cooling on the counter, Peach Sauce was the perfect choice.
I decided to grill the peaches first, which gave them a great depth of flavor.  Warm, sweet peaches, cool, vanilla ice cream along with fluffy, Angle Food cake, yep, it's gonna be a great evening.
Grilled Peach Sauce
3 to 4 fresh peaches - cut in half
1/4 c. brown sugar
2 tablespoons of agave or honey
3 tablespoon butter
pinch of salt
pinch of cinnamon
Heat grill pan on stove top or use outdoor grill turned to med high heat. Rub grates with canola oil.
Place peaches on grill, flesh side down.  Cook approximately 5 minutes or until the peach has slightly charred grill marks.
Turn and do the same to the skin side.
Remove from grill, place on plate or bowl and cover with plastic wrap.  Let cool.
Once cooled, remove skin from peaches and slice.
Melt butter in medium sauté pan and add peaches.  Cook for 3-4 minutes.
Add brown sugar, honey, salt and cinnamon.  
Continue to cook on medium low heat until sauce is thick and syrupy.
Spoon over cake, ice cream, or enjoy in a bowl with a "plop" of whipped cream!
